Camp-side Cooking

Well January is nearly over, and we’ve been busy planning some trips away this year. Following the last blog post, I have been looking into a few new meals to try out whilst we camp.
We have a selection that work well for us whilst we’re away and always take with us some ‘store cupboard supplies’. The kids aren’t fussy when it comes to eating and will always try new things, but we do have some food allergies to take into consideration and we’ve learnt to adapt accordingly so we can enjoy meals together.
On the day that we travel, I take mince meat out of the freezer and by the time we’ve arrived and pitched the tent, it’s ready to be cooked into a bolognaise. Simple meals are perfect after long car journeys and putting up tents. You could also make up some meatballs and sauce before going, reheat over the campfire or stove, and cook some pasta to accompany or prepare some fajita chicken in advance, reheat and serve with tortilla wraps.
Campfire treats are an absolute must-take on any trip! After a full day’s activities or a long walk, we love to sit around the fire watching the stars. There’s nothing better than tucking into sticky sweet fire-toasted marshmallows and watching the stars!
My small people are absolute fruit bats. Some fruits travel and store better than others, especially if you’re camping in the Summer. We’re always certain to take a bag of apples, some oranges, and a big bag of grapes. Dried fruit comes in handy too, as little boxes of raisins are excellent at snack time (“snack, snack, snack!”…at what age does that stop?!).
I recommend any meal that requires one pot or pan (or two at the most), to save both on washing up and space in the equipment box/bag.

Frying Pan Pizza Pie
1 pack pizza dough
1tbsp tomato puree/pesto
125g grated cheese or mozzarella
4-6 cherry tomatoes sliced
Make up the pizza mix following pack instructions. Put in a bowl, cover with a clean tea towel or cling film and leave somewhere warm to rise for 1 hr, or until doubled in size. Divide in half and roll or press out each piece on a lightly floured surface (or press out into the base of the pan to save on washing up!). Spread with pesto or tomato puree, then top with cheese and tomatoes. Put the other round of dough on top to cover.
Cook on a fairly low heat for 10 mins. Invert onto a large plate, then slide back into the pan and cook for 10 mins more until well browned. Leave to cool for 10 mins, then cut into wedges to serve.
